Opera lilloana 47 (2009): Las caseínas de la leche. Aspectos comparativos

This monographic work constitutes a review of the most relevant biological characteristics of the structure and function of milk caseins. The evolutionary processes from the Cynodonts to present-day placental mammals are described. Moreover, interspecific and intraspecific variations found in these proteins are also presented, as well as the regulatory mechanisms that determine their  expression in milk.
